Egg & Spinach Casserole

Makes 6 servings

  • 3/4 Cup egg substitute
  • 3 eggs, beaten
  • 3/4 C reduced-fat sharp cheddar, shredded
  • 5 oz package fresh spinach
  • 1/2 t onion powder
  • hot sauce to taste (optional)
  • red and yellow peppers, chopped (optional)
  • cooking spray

Chop spinach in food processor. Combine all ingredients in large bowl. Spray baking dish or pie plate with cooking spray. Bake at 375 degrees for 25-30 minutes, or until eggs are set. If using for meal prep, portion into 6 plastic baggies and freeze or refrigerate (if using within 3 days).
